The filling in a good deviled egg is smooth in a way that a fork cannot produce, and the reason is mechanical.

Cooked yolk is made of protein granules that a fork flattens but does not break up. You can add mayonnaise until the filling is loose and it will still be faintly grainy on the tongue. Push the yolks through a fine sieve instead — thirty seconds with the back of a spoon — and the granules are forced apart. What comes out the other side whips into something closer to a mousse.

It is the single difference between a homemade deviled egg and the ones at a good caterer.

  1. Lower the eggs into already-boiling water and cook at a gentle boil.11 minutes
  2. Straight into ice water for. Peel under running water.5 minutes
  3. Halve them and pop the yolks out into a sieve.
  4. Push the yolks through the sieve with the back of a spoon.
  5. Beat in the mayonnaise, Dijon, vinegar, cayenne, salt and pepper until light.
  6. Pipe or spoon back into the whites. Finish with chives and paprika.

The grey-green ring is overcooking, and it is avoidable

That ring is iron sulfide, formed where sulfur from the white meets iron in the yolk under prolonged heat. It is harmless and it looks terrible. Eleven minutes, then straight into ice water to stop the cooking, and it does not appear at all.

Buy the eggs a week before you need them

Very fresh eggs are almost impossible to peel — the white's pH is low and it bonds tightly to the inner membrane. Over a week or two the pH rises and the bond weakens. This is the one recipe where the older carton at the back is the right one.

Take a sliver off the bottom

Cut a thin slice from the curved underside of each white so it sits flat. Deviled eggs that roll on the platter arrive at the table upside down, and it costs one extra pass with a knife to prevent.

Storing

Two days. Keep the whites and the filling separate and assemble on the day if you can — filled eggs weep slightly overnight and the surface dulls.

Why are my eggs impossible to peel?

They are too fresh. Use eggs at least a week old, and start them in boiling water rather than cold.

What causes the green ring around the yolk?

Overcooking. Eleven minutes and an ice bath prevents it.

Can I make them ahead?

Cook and peel the eggs up to two days ahead. Fill them on the day.

How do I get the filling smooth?

Sieve the yolks rather than mashing them. A fork cannot break the granules down.
